Der Old Monk Rum 7 Jahre wird wie die meisten Rumsorten auf der Basis von Melasse hergestellt. Er wird 7 Jahre lang zur Reifung in Eichenfssern gelagert, die zuvor zur Lagerung von Sherry benutzt wurden.
